I FINALLY found a good butter substitute that works with this diet! It's actually still butter, but it's had the casein part removed. You can find it at a Mediterranean food store, or an Indian food store, or probably most health food stores. It's called "Ghee," or sometimes, "Clarified Butter." It's real butter! But it's also casein free. (At least, the label says it is.) The texture is a bit thinner than butter normally is, and (of course) it's more expensive than real butter. But it tastes great, spreads well on toast, and you can use it in soups, frying, baking, and so on. Hallelujah.
